Fast, Easy TV Football Snacks: Extra Point Cheesy Quesadillas

Fast and easy snack recipes are essential to the TV football season. Be prepared this football season with several different snack recipes to tame your big screen TV football friends. My recipe for Extra Point Cheesy Quesadillas is not only easy, but it is fun to make as well. You can even customize each Cheesy Touchdown Quesadilla to each of your football fan's liking. The shopping list is short for these awesome TV football snacks, but the compliments you get will be big!

What you will need:

2 packages of flour tortillas (about 16-24 tortillas)
2 cups shredded cheddar cheese
2 cups shredded Monterey Jack cheese
1 cup chopped tomatoes
1 cup chopped onions
½ cup of chopped black olives
½ cup of chopped jalapeños

Serving Condiments:
Sour Cream, Hot Sauce or Picante Sauce

Start by chopping up all your veggies. You'll want to keep them separated in individual storage bowls, so that you can put them into the refrigerator until you are ready to start making these quick hot snacks. If you bought the cheeses in blocks, now is the time to go ahead and shred it. Put the shredded cheeses into individual containers too.

When you are ready to start making your Extra Point Cheesy Quesadillas, clear an area near the stove top for easy and quick assembly of your hot snack. Get out all the pre-prepared ingredients as well as the flour tortillas. Heat up a non-stick skillet to about medium heat. Make sure you don't get the skillet too hot or you'll burn the tortilla before your cheese has had a chance to melt.

Lay one flour tortilla into the hot skillet and warm until lightly brown. Now flip the tortilla over. Put about 1 tablespoon of cheese on top of the tortilla. Let it melt for about 30 seconds. Now add tomatoes, onions, black olives and jalapeños to your liking. Heat an additional minute. At this point you want to flip one half of the tortilla onto the other side, making the finished product look like half a tortilla, or half-moon shaped. Let the ingredients simmer another 30 seconds, then remove the quesadilla from the pan.

Remove the quesadilla from the skillet and place on a cutting board. Cut your Extra Point Cheesy Quesadillas into three triangle-shaped pieces. This should be enough to serve one linebacker sized guy. You can even have your guests come into the kitchen one at a time to assist you in preparation of their personalized Extra Point Cheesy Quesadillas. Let them determine what goes inside of it, and how much. It only takes about 3 minutes from start to finish, per serving. You'll no doubt have a long line of fans formed outside your kitchen door, patiently waiting for these awesome Extra Point Cheesy Quesadillas. Be sure to have hand wipes available.
